Light roasted coffee beans actually have more caffeine than darker roasts. A strong, rich flavor might seem to indicate an extra dose of caffeine in darker roasts, but the truth is that light roasts actually pack more of a jolt than their darker counterparts.
Medium roasted beans have a medium brown color and a bright acidity to them. Specific varietal aromatics of the coffee, like floral, berry, vegetable, or fruity, are still apparent despite longer roasting times. Some caffeine content is also lost compared to light roasts.
The darker the roast, the less acidity and caffeine there will be in the coffee beverage brewed from it. The characteristics of this roast are complemented by caramelization notes, like nutty or chocolate, and a slightly bittersweet aftertaste.
